Grain-free Dinner Rolls/Veggie Burger Buns-revised




Besan rolls made with brown flax meal.
 These are good on there own, with a meal, or as veggie burger buns. If you'd like lighter color rolls use golden flax meal.

2 & 1/2 cup besan a.k.a. chickpea flour
1 cup organic flax meal or ground flax
2 cups water
3/4 tsp baking soda
3 tbsp apple cider vinegar or lemon juice

1) Preheat oven to 350F
2) Place besan, flax meal, baking soda, and water into bowl and stir until combined.
3) Add apple cider vinegar or lemon juice and gently fold in. This is when your dough will rise.
4) Drop by 1/2 cupfuls onto silicone pad or greased cookie sheet.
5) Bake for 30-35 minutes or until done.


These rolls and buns are grain-free, gluten-free, corn-free, rice-free, dairy-free, casein-free, soy-free, almond-free, tree nut-free, egg-free, potato-free, nightshade-free, and xanthan gum-free.
They can be made completely yeast-free by using lemon juice instead of apple cider vinegar.

    It's Erica, I have a question for you. I've been playing around with Chia seeds in my baking and I keep getting the ratio off. Have you ever used chia? I'm going to try these tomorrow and I'm not sure how much chia to sub for flax. I'm thinking 3/4:1 (3/4 being ground chia) and keep the water the same. Thanks!

    FYI: my daughter has an allergic reaction when we use flax meal.

  2. Chia tends to soak up a lot of liquid. I've only used it a few times in baking, since my son reacts to chia. It seemed to me that you can use 1/2 the amount of chia in place of flax. So you could start with 1/2 a cup ground chia. If the dough seems too thin, add a little more. You could let a few minutes elapse, before you decide if more needs to be added of not. Before baking, these rolls should be just able to hold their form. I usually drop them onto a silicone sheet that is already in the oven.
    On an another topic, have you ever tried using your probiotic powder as an acidic agent? Or even put some in some water or coconut water for a little bit and then use that in place of lemon juice or ACV?

  5. Haven't tried any of these yet, but I am way too excited! The sandwich bread and roll recipes are the only things I've found so far that come close to being suitable for my son who is allergic to everything! I'll update once I have all of my ingredients and I've tried it out! Thanks!

  7. sorry I am new to all this but are all these breads carb free, I have cancer and am not allowed carbs but I want to find a bread or cracker I can eat in place of processed bread, for soups,sandwiches etc.

  8. These rolls are excellent when prepared according to the directions! (i.e. no substitutions) -- not doughy inside, and not hard as a rock like many other gluten-free recipes. Perfect! But I'm wondering, can I add some salt? Or will there be a chemical reaction?
